Sambal Telur Mata using Puteri Chili Giling — a convenient chili paste that adds a punch of flavor!

Ingredients

  • 2-4 eggs (as needed)
  • 4-5 tbsp Puteri Cili Giling
  • 2-3 tbsp water (to adjust sambal consistency)
  • Cooking oil or butter (just a little, for the pan)

Instructions

  1. Cook the Eggs (Runny Style):
    • Lightly oil a non-stick pan and set it over low to medium heat.
    • Crack eggs gently into the pan without breaking the yolk.
    • Cover with a lid and let cook for 1-2 minutes, until the whites are just set but the yolks are still runny.
    • Remove carefully and set aside.
  2. Prepare the Sambal:
    • In a small pan, combine Puteri Cili Giling with 2-3 tbsp of water.
    • Simmer over medium heat, stirring occasionally, for about 5-7 minutes, until the mixture has thickened and become aromatic.
  3. Assemble:
    • Gently plate the runny eggs.
    • Spoon the hot sambal over the eggs, or serve on the side to preserve the yolk texture.
    • Best served with hot rice.
