Pani Puri

Panipuri or golgappa is a deep-fried breaded hollow spherical shell, about 1 inch (25 mm) in diameter, filled with a combination of potatoes, raw onionschickpeas and spices.

Ingredients

For the Puris:

  • Store-bought pani puri shells

 

For the Filling:

  • 1 cup mashed potatoes
  • ½ cup cooked chickpeas (or black beans)
  • Salt & pepper to taste
  • Chopped coriander (optional)

 

For the Pani (Spiced Water):

  • 3 tbsp Puteri Chili Sauce
  • 2 tbsp lemon juice
  • 1 tsp ground cumin
  • 1½ cups cold water
  • Chopped mint or coriander (optional)

 

Instructions

  1. Make the Filling:
    • In a bowl, mix mashed potatoes, chickpeas, salt, and pepper.
  2. Prepare the Pani (Spiced Water):
    • In a jug, combine Puteri Chilli Sauce, lemon juice, cumin, and cold water.
    • Stir well and chill in the fridge. Adjust seasoning to taste.
  3. Assemble the Pani Puri:
    • Crack a hole in the top of each puri.
    • Fill with the potato-chickpea mixture.
    • Pour in the chilled pani.
  4. Serve:
    • Best enjoyed fresh and crispy! Dip and eat in one bite.
