Kari Ayam

Here’s a rich and flavorful Kari Ayam (Chicken Curry) recipe using Puteri Cili Giling!

Ingredients

  • 1 whole chicken (cut into medium pieces) or 800g chicken parts
  • 5 tbsp Puteri Cili Giling
  • 1 cinnamon stick
  • 2 star anise
  • 2-3 potatoes, peeled and cut into chunks
  • 300 ml water (adjust as needed)
  • Cooking oil

Instructions

  1. Spice Sauté
    • Sauté the Aromatics
    • Heat oil in a large pot
    • Add cinnamon stick and star anise. Sauté until fragrant and lightly browned.
  2. Add the Cili Giling:
    • Add Puteri Cili Giling and cook over medium heat 5-8 minutes, stirring often, until the oil separates and the paste is fragrant.
  3. Add Chicken:
    • Add the chicken pieces and coat well in the paste.
    • Cook for 5-10 minutes, allowing the chicken to brown slightly.
  4. Add Liquids & Potatoes:
    • Pour in water and bring to a simmer.
    • Add potatoes and let them cook until the chicken is tender and potatoes are soft (around 20-30 minutes)
  5. Serve:
    • Serve hot with steamed rice, roti canai, or bread.
