Fried White Fish with Soy-Ginger Sauce

Ingredients

  • Fish & Frying

    1. Fish fillet (any frim type: snapper, siakap and etc_

    2. ½ tsp salt

    3. 1 Tbsp cornstarch

    4. Oil

       

     

  • Aromatics (for sauce base)

    1. 3 shallots, chopped

       

    2. 2 cloves garlic, chopped

       

    3. ½ inch ginger, chopped

       

    4. ½ red chili, chopped

       

    1. 1 Tbsp Puteri dark soy sauce

       

    2. 1 tsp Puteri light soy sauce

       

    3. 1 tsp Puteri oyster sauce

       

    4. 1 tsp sugar

       

    5. ½ tsp sesame oil

       

    6. ¼ cup water

       

    *Can use cornstarch to thicken the sauce

     

  • Garnish

    1. Thin slices of ginger

       

    2. 1 clove garlic, finely chopped

       

    3. ½ red chili, thinly sliced

       

    4. 1 spring onion, chopped

       

    5. Fresh coriander

Instructions

Step 1: Season & Prepare the Fish

      1. Season fish fillet with salt and white pepper.

      2. Pat dry with kitchen towels, then coat lightly in cornstarch.

Step 2: Deep-Fry the Fish

      1. Heat oil in a pan or wok.

      2. Fry fish until golden brown and cooked through. Set aside.

Step 3: Make the sauce

6. Using the same oil (only necessary amount), saute shallots, garlic, ginger, and chilli until fragrant.

8. Add all sauces, sugar, sesame oil, and water. Stir well.

9. If you like it thicker, add in cornstarch.

                            

Step 4: For Garnish

      1. Place fried fish on a plate. Pour sauce over the top.

      2. Sprinkle with ginger slices, garlic, chilli, spring onion, and coriander.
