Ingredients

  • 800g Chicken cuts

  • 1 tsp turmeric powder

  • Salt as needed

  • 1 red onion

  • 3 cloves garlic

  • ½ inch ginger

  • 2 tbsp Puteri Oyster Sauce

  • 2 tbsp Puteri Dark Sauce

  • 5 stalks birds’ eye chilli

  • 2 tbsp coriander seed

  • Water for gravy consistency

  • 3 stalks red chilli

  • Spring onion for garnish

     

Instructions

  • Marinate the chicken

      • Mix the chicken cuts with turmeric powder and a little salt.
      • Set aside for at least 15 minutes.

  • Prepare the spice paste
      • Pound or blend the red onion, garlic, ginger, bird’s eye chillies, and coriander seeds into a coarse paste.

  • Cook the chicken
      • Heat some oil in a wok or pan. Fry the chicken (only half cooked)

      • Remove extra oil, now add the spice paste and sauté until fragrant.

      • Pour in Puteri Oyster Sauce and Puteri Dark Sauce. Mix well.

      • Add enough water for gravy consistency.

      • Now add the fried chicken. Cover and let the chicken simmer until fully cooked and tender, stirring occasionally.

  • Finish the dish
      • Once the chicken is cooked and the gravy thickens to your liking, add the sliced red chillies.

      • Adjust seasoning with salt if needed.

                              Serve

      • Garnish with chopped spring onions.

      • Serve hot with steamed rice. 🍚✨
