Ingredients

  • 300g kuey teow (flat rice noodles)
  • 2 cloves garlic, minced
  • 100 g prawns or sliced chicken (optional)
  • 1 egg
  • A handful of bean sprouts
  • A few stalks of chives or spring onions, cut into 2-inch lengths
  • 2 tbsp Puteri Kicap Cair
  • 1.5 tbsp Puteri Sos Lada Hitam
  • 1-2 tbsp cooking oil

Instructions

  1. Prep the Noodles:
    • If using refrigerated kuey teow, loosen them gently by microwaving for 30 seconds or sprinkling a bit of water and separating with your hands.
  2. Stir-Fry
    • Heat oil in a wok or large pan over medium-high heat.
    • Add garlic and stir-fry until fragrant.
    • Add prawns or chicken (if using), and cook until just done.
    • Push everything to the side, crack the eggs, and scramble lightly.
    • Add the noodles, followed by Puteri Kicap Cair and Puteri Sos Lada Hitam.
    • Toss everything quickly to combine and coat evenly.
  3. Finish
    • Add bean sprouts and chives. Stir-fry for another 30-60 seconds.
    • Serve hot immediately.
