Ingredients

For the filling:

  • 1 tbsp oil
  • 1 small onion, chopped
  • 1 carrot, julienned
  • 1 cup shredded cabbage
  • 1 tbsp soy sauce
  • Salt & pepper to taste

Others:

  • 12 spring roll wrappers
  • Water and flour paste (to seal)
  • Oil for deep frying

For the sira glaze:

  • 2 tbsp oil
  • 3 tbsp sugar
  • 1 tbsp Puteri Cili Giling (adjust to taste)
  • 1 tbsp Puteri tomato sauce
  • 2 tbsp water
  • A pinch of salt

Instructions

  1. Prepare the filling:
    • Heat oil in a pan, sauté onion until fragrant. Add carrot and cabbage, stir-fry 2–3 mins. Add soy sauce, salt. Cook until slightly soft. Let it cool.
  2. Wrap the popiah:
    • Place 1 tbsp filling in a wrapper. Fold and seal with flour paste. Repeat.
  3. Fry the popiah:
    • Heat oil and deep-fry until golden brown. Drain on paper towels.
  4. Make the sira glaze:
    • Heat oil, add sugar and let it caramelize slightly. Add chili paste, tomato sauce, water, and salt. Simmer until thick.
  5. Coat the popiah:
    • Toss fried popiah in the glaze quickly to coat evenly. Serve immediately.

 

Tips for keeping popiah crispy

  • Fry the popiah in hot oil over medium heat
  • Make sure the sira sauce is cooked until thick and perfect before mixing with the popiah
  • Don’t roll the popiah skin too tightly
