Ingredients

Fish:

  • 2 medium-sized whole fish (e.g., seabass, tilapia, or mackerel)
  • 2 tablespoons lime juice
  • 1 teaspoon salt

Marinade:

  • 3 tablespoons Puteri Cili Giling
  • 2 cloves garlic, minced
  • 2 shallots, minced
  • 1 teaspoon turmeric powder
  • 1 teaspoon tamarind paste (diluted in 2 tablespoons of water)
  • 1 tablespoon palm sugar or brown sugar
  • 1 tablespoon cooking oil
  • Salt to taste

For Grilling:

  • Banana leaves (optional, for wrapping)
  • Cooking oil for greasing

Garnish (optional):

  • Sliced lime or calamansi
  • Fresh cilantro or parsley

Instructions

  1. Prepare the Fish:

    • Clean the fish and make diagonal slits on both sides.
    • Rub the fish with lime juice and salt. Let it sit for 10 minutes, then rinse and pat dry.
  2. Make the Marinade:

    • In a bowl, mix Puteri Cili Giling, minced garlic, shallots, turmeric powder, tamarind water, palm sugar, cooking oil, and salt.
    • Adjust seasoning to taste.
  3. Marinate the Fish:

    • Spread the marinade generously over the fish, ensuring it gets into the slits.
    • Let it marinate for at least 30 minutes (or up to 2 hours for deeper flavor) in the refrigerator.
  4. Prepare for Grilling:

    • If using banana leaves, lightly grease them with oil and wrap the fish.
    • If not using banana leaves, grease a grill or grilling pan with oil.
  5. Grill the Fish:

    • Preheat the grill or grilling pan over medium heat.
    • Place the wrapped fish or directly place the marinated fish on the grill.
    • Cook for 5-7 minutes on each side (depending on the size of the fish) until fully cooked and slightly charred.
  6. Serve:

    • Transfer to a serving plate and garnish with lime slices and fresh herbs.
    • Serve hot with steamed rice, sambal, and a side of fresh vegetables.
